Kudos to Chef Rupert Garcia!

The Fairmont Palliser Hawthorn Dining Room’s Chef De Cuisine Rupert Garcia competed against the best chefs from across Canada and was awarded silver in the Canadian Culinary Championship held in Ottawa February 2-3, 2024.

After winning gold in the regional qualifier competition last November, Rupert and nine other Canadian chefs flew to Ottawa to compete in the two-day championship, renowned as the most respected culinary competition in Canada. The chefs participated in a mystery wine pairing challenge, a black box competition and the grand finale event of presenting their signature dish. Chef Rupert served steelhead trout accompanied by cranberry apple fluid gel with pickled radish.

“I’m very thankful for the support of the Palliser team,” said Rupert Garcia. “A huge shout out to Marion Rocafort! We unlocked another level during the competition and hope to translate that well in the future.”

The Canadian Culinary Championship is an annual national event dedicated to “Building a More Inclusive Canada” by elevating and celebrating Canadian cultural excellence. Canada’s best wines, breweries and distilleries are also featured in the events.

Chef Rupert Garcia is proudly leading the concept re-launch of Hawthorn Dining Room, located within the iconic Fairmont Palliser Hotel in downtown Calgary. New offerings include free valet nights, wine Wednesdays, Champagne Fridays and a one-of-a-kind Charton Hobbs Veuve Clicquot champagne cart available during weekend afternoon tea service.
