Bacon Wrapped Jalapeño Mummies

When my kids were little, I loved adding a playful touch to meals and snacks by decorating them with candy eyes.

Now, even though my kids are older, I still can’t resist sneaking candy eyes onto various dishes, like these jalapeño poppers! Also they are a perfect bite for your next gathering!

These bacon-wrapped jalapeño mummies are a delicious and festive appetizer, perfect for Halloween parties and snacks. Jalapeños are stuffed with a cream cheese filling, wrapped in bacon and then baked for a savoury and satisfying treat. I’ve always liked adding Old Bay to my cheese balls, jalapeño poppers and cheese dishes for an extra hint of complexity and boldness.

Once these mummies have been removed from the oven and cooled a bit, add the eyes for a fun twist! Or if making for a potluck, omit the eyes and enjoy as is!

Bacon Wrapped Jalapeño Mummies

An easy appetizer that is delightful whenever you need to whip something up or to put out during your Halloween gathering. Plan for 2 per person.

Ingredients

  • 1 250g package cream cheese, softened
  • 3/4 cup shredded old cheddar cheese
  • 3/4 cup shredded jalapeño Monterey jack cheese (gouda is a nice substitute for those wanting less spice)
  • 1/2 tsp chili powder
  • 1 tsp Old Bay seasoning
  • pinch of salt
  • 12 jalapeños, halved lengthwise with stem and seeds removed
  • 12 pieces bacon, halved lengthwise
  • candy eyes for decorating

Instructions

  • In a bowl, combine softened cream cheese, shredded cheese, spices and salt. Stir until blended. Set aside.
  • Preheat oven to 400 F and line a baking sheet with foil or parchment paper. Place a wire rack on the foil and spray with nonstick cooking spray.
  • Add about 1 tbsp of the cream cheese filling to each jalapeño half. Wrap each piece with a strip of bacon and place on the rack.
  • Bake for about 15-20 minutes or until the bacon is crispy and cooked through. Remove from the oven to a platter. Let sit for a few minutes before adding the candy eyes.
