Berry season is in full swing, and we are enjoying every minute of it.
While we are grabbing orbs of blueberries by the handful, dipping strawberries in melted chocolate and topping raspberries with fresh cream, we are also enjoying them in baking and cooking.
These sweet berries work well in savoury dishes like this bright salsa. Paired with the flavours sharp flavours of red onions and spicy jalapenos, they provide a sweetness that balances out the whole. Berry salsa is dressed simply with lime juice, salt and pepper, and an hour in the fridge will bring the flavours together.
The beauty of this dish is that you can make it with your favourite berry or with a mixture of what you can find or have on hand. If using blueberries or blackberries, they can be added whole. Larger berries, like strawberries, can be halved or quartered to make it easier to eat.
If you like a spicier salsa, leave seeds and the seeds and white interior veins or ribs in.

The simplicity of this recipe allows the natural flavors of the berries to shine through. I love the fact that you can use any berry you prefer or even a combination of different ones. Personally, I tried it with blueberries, strawberries, and raspberries, and the medley of colors and flavors was a feast for the eyes and the taste buds.
