Life is busy and quick meals are important. With work, school and all the activities, it’s easy to find filling meals that you can make at home with very minimal effort.

Caprese Chicken is a recipe that is easily prepared, uses extra tomatoes and basil from the garden, and simple, flavourful ingredients. The chicken can be paired with a salad or pasta for a delicious lunch or dinner.

Caprese Chicken

Ingredients

  • 4 boneless chicken breasts
  • 3 tsp pesto
  • 8 slices mozzarella
  • 2 tomatoes sliced
  • 2 tbsp 2 tbsp oil
  • fresh basil
  • salt and pepper

Instructions

  • Preheat the oven to 400 F
  • Coat the chicken breasts in pesto, salt and pepper.
  • Heat an oven-proof skillet on the stove.
  • Drizzle oil in the skillet and add the chicken, browning it on both sides.
  • Once browned, add 2 slices of cheese on each piece of chicken and top with a slice or two of tomatoes.
  • Add the skillet to the oven and cook until the chicken reaches an internal temperature of 165 F approximately 15-20 minutes.
  • Garnish the chicken with basil and a sprinkle of salt.
  • Serve with a salad or pasta.
