This is a variation of a recipe created by Stephanie Kolk at Kayben Farms in Okotoks. Add a few drops of sesame oil, use soy sauce instead of salt and lime juice instead of lemon to dress a killer Asian slaw or mixed melon and jicama salad.
Cilantro Vinaigrette
Ingredients
- 1 cup fresh cilantro, use the trimmed stems too if they aren’t bitter
- 1/4 cup lemon juice, fresh squeezed
- 1/4 cup rice wine vinegar
- 3-4 tbsp honey
- 1 tsp grated fresh ginger
- 1/2 cup good canola oil (Highwood Crossing)
- salt and pepper to taste
Instructions
- Combine all ingredients except oil in a blender or food processor. An immersion blender works well for smaller amounts.
- Â Gradually add the oil as you are processing. Season to taste.
