With school back in full swing, making sure kids of all ages have something delicious and filling to eat is always a priority.

Cinnamon and chocolate chips mixed with rolled oats and a few other ingredients create a thick, chewy and tasty breakfast bite we love to enjoy with a cup of yogurt or berries. These oatmeal bars can be tucked into a lunch box and also make a great after school snack.

Oatmeal Bars

Ingredients

  • 2 cups rolled oats
  • 1/3 cup brown sugar
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup milk
  • 2 eggs
  • 2 tbsp olive oil
  • 1 tsp vanilla
  • 1/2 cup chocolate chips

Instructions

  • Preheat the oven to 350 F. degrees.
  • In a large bowl, combine the oats, sugar and spices.
  • Pour the wet ingredients into the dry ingredients, making sure everything is incorporated.
  • In second bowl, combine the wet ingredients along with the eggs and combine well.
  • Add the chocolate chips and combine.
  • Pour the batter into a parchment-lined 8” dish.
  • Bake for 30 minutes. Let cool before cutting into squares.
