With school back in full swing, making sure kids of all ages have something delicious and filling to eat is always a priority.
Cinnamon and chocolate chips mixed with rolled oats and a few other ingredients create a thick, chewy and tasty breakfast bite we love to enjoy with a cup of yogurt or berries. These oatmeal bars can be tucked into a lunch box and also make a great after school snack.
Oatmeal Bars
Ingredients
- 2 cups rolled oats
- 1/3 cup brown sugar
- 1 1/2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 cup milk
- 2 eggs
- 2 tbsp olive oil
- 1 tsp vanilla
- 1/2 cup chocolate chips
Instructions
- Preheat the oven to 350 F. degrees.
- In a large bowl, combine the oats, sugar and spices.
- Pour the wet ingredients into the dry ingredients, making sure everything is incorporated.
- In second bowl, combine the wet ingredients along with the eggs and combine well.
- Add the chocolate chips and combine.
- Pour the batter into a parchment-lined 8” dish.
- Bake for 30 minutes. Let cool before cutting into squares.
