As CHARCUT Roast House expands to Calgary’s University District, co-chefs Connie DeSousa and John Jackson and co-owner Carrie Jackson announce an exciting remodel of the restaurant’s award-winning downtown location. Popular for its charbroiled and rotisserie meats, as well as handcrafted salumi, CHARCUT has become a cornerstone of Calgary’s culinary scene, renowned for its energetic atmosphere and commitment to flavour.
Located adjacent to the new Alt Hotel at 4150 University Avenue NW, CHARCUT University District’s 2,800 square-foot space features a theatrical open kitchen with signature-CHARCUT custom equipment, including a rotisserie grill and a smoker. Direct views through 12-foot picture-glass windows reveal the chef’s salumeria, where Connie and John display their dry-aged beef, whole pigs and house-made salumi. Jack Coetzee is appointed the location’s Executive Chef and Ty Swihard is General Manager.
Located adjacent to Hotel Le Germain at 899 Centre Street South in downtown Calgary, the original CHARCUT unveils an interior renovation with sleek and comfortable banquettes, wood-picket accents and a modern bar with a dramatic display.
