Bacon Wrapped Jalapeño Mummies
An easy appetizer that is delightful whenever you need to whip something up or to put out during your Halloween gathering. Plan for 2 per person.
- 1 250g package cream cheese, softened
- 3/4 cup shredded old cheddar cheese
- 3/4 cup shredded jalapeño Monterey jack cheese (gouda is a nice substitute for those wanting less spice)
- 1/2 tsp chili powder
- 1 tsp Old Bay seasoning
- pinch of salt
- 12 jalapeños, halved lengthwise with stem and seeds removed
- 12 pieces bacon, halved lengthwise
- candy eyes for decorating
In a bowl, combine softened cream cheese, shredded cheese, spices and salt. Stir until blended. Set aside.
Preheat oven to 400 F and line a baking sheet with foil or parchment paper. Place a wire rack on the foil and spray with nonstick cooking spray.
Add about 1 tbsp of the cream cheese filling to each jalapeño half. Wrap each piece with a strip of bacon and place on the rack.
Bake for about 15-20 minutes or until the bacon is crispy and cooked through. Remove from the oven to a platter. Let sit for a few minutes before adding the candy eyes.
