Corn and Avocado Salad

Ingredients

cobs
fresh corn, shucked, cooked and kernels removed

avocado, diced
1/2
cup
red onions, finely diced

cherry tomatoes, quartered
bunch cilantro, washed
Dressing
1
tbsp
red wine vinegar
1
tbsp
honey
1
tbsp
fresh lemon juice
2
tsp
Dijon mustard
salt and pepper to taste
Instructions
In a large bowl mix together vegetables.
In a measuring cup or jar with a lid, add all ingredients and whisk or shake until combined.
Pour dressing over salad and lightly toss to combine. Serve immediately.
