Gomen (stewed kale)

This Ethiopian veggie recipe serves 2-4 as a side dish and takes about 15 minutes to prepare.

Ingredients

  • 2 tbsp butter or ghee
  • 1 small onion, chopped
  • 2 cloves fresh garlic, minced
  • 1-2 inches fresh ginger, peeled and minced
  • 1 bunch kale, washed, trimmed and finely chopped
  • 1/2 cup water
  • pinch ground cardamom
  • salt to taste

Instructions

  • Melt the butter or ghee over medium heat in a large frying pan. Once sizzling, add the onion and sauté until soft and slightly golden.
  • Add the garlic and ginger and continue to sauté until slightly caramelized. Add the kale and water and immediately cover with a lid or pizza tray.
  • Steam the kale for about 5 minutes or until it’s shrunken enough to stir around and is still bright green in colour.
  • Add salt and ground cardamom and stir thoroughly so all the kale feels the heat of the frying pan bottom and the onion, garlic, ginger, are mixed through.
  • Stir the kale mixture until soft and stewed. Add a splash of water if you don’t want any browned or crispy kale.
  • Sprinkle with a pinch more salt and serve with naan or Injera, or as a side dish to any meal.
