Maroulosalata
This salad can be served chilled or at room temperature. It's a common appetizer or served as a side dish with grilled meat, seafood, or grilled vegetarian options. Pair with crusty bread and a side of olives warmed in olive oil.
- 1/4 cup olive oil
- 2 tbsp fresh lemon juice
- salt and pepper, pinch
- 4 cups romaine lettuce, thinly sliced
- 3 green onions, thinly sliced
- 2 Persian cucumbers, sliced thin
- 1/3 cup feta cheese, crumbled
- 2 tbsp fresh dill, roughly chopped
In a medium-sized bowl, add olive oil, lemon juice, salt and pepper. Whisk to combine. Add the remaining ingredients and toss until well dressed. Best served within a couple hours of making.
