Cut each grapefruit in half, crosswise
Run a paring or grapefruit knife around the edge of the peel, loosening the flesh from the peel.
If the grapefruit half is not sitting evenly, cut off a bit from the bottom so that it stands straight.
Sprinkle 1 tablespoon of sugar on top of each grapefruit half.
Use a kitchen torch to brulee the sugar, melting it until it hardens and becomes golden brown. Alternatively, the grapefruit can be broiled for 3 to 5 minutes.
Sprinkle each half with Maldon salt before serving.
