Preheat the oven to 400 F
Coat the chicken breasts in pesto, salt and pepper.
Heat an oven-proof skillet on the stove.
Drizzle oil in the skillet and add the chicken, browning it on both sides.
Once browned, add 2 slices of cheese on each piece of chicken and top with a slice or two of tomatoes.
Add the skillet to the oven and cook until the chicken reaches an internal temperature of 165 F approximately 15-20 minutes.
Garnish the chicken with basil and a sprinkle of salt.
Serve with a salad or pasta.
