Simmer water in a pot or bottom of double boiler, on medium heat.
Add a glass bowl or top of double boiler over the water, making sure the bowl sits on the pot securely and doesn’t touch the water.
Add the chocolate and cream in the bowl. When the chocolate starts melting, stir with a spatula until the chocolate and cream are incorporated and melted.
Transfer to a fondue pot to keep warm and serve.
Notes
Microwave directions: Add the chocolate and cream to a glass bowl. Melt in 30 second intervals, stirring between each,until the chocolate is melted.
