Shish Tawook

Shish Tawook is a well known chicken kabob dish originating in the Middle East with Turkish origins. Shish means skewer and tawook is chicken. The two combined result in a marinated chicken kabob in a spiced yogurt that is moist, flavourful and simply divine.

Equipment

  • Skewers, if wooden let soak up to an hour before using.

Ingredients

  • 1/2 cup Greek yogurt
  • 5 cloves garlic, minced
  • 1/4 cup fresh lemon juice
  • 2 tbsp tomato paste
  • 3-4 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/8 tsp nutmeg
  • 1/8 tsp cinnamon
  • 1/8 tsp allspice
  • salt and pepper to taste
  • 12 boneless, skinless chicken thighs cut into bite size pieces

Accompaniments

  • pita bread or naan bread
  • tomato, sliced thin
  • white or red onion, sliced thin
  • radishes, sliced in half and grilled
  • 1 lemon, sliced in half and grilled on cut side
  • hummus
  • butter lettuce

Instructions

  • Create marinade by whisking together Greek yogurt through salt and pepper.
  • In a bowl or plastic ziplock bag, combine marinade and chicken. and let sit in the refrigerator a minimum of 2 hours or overnight.
  • Add chicken pieces to skewers. Grill over medium heat 12-15 minutes turning every few minutes, or until cooked through.
  • Remove from grill and serve with accompaniments.
