Chef Mario Spina is back behind the grill with Burger 320’s new home in Calgary’s Greenview Industrial area.

The space also brings Marietta’s Gelato into the mix, pairing brisket burgers with house-made gelato under one roof.

Chef Mario Spina didn’t plan a comeback so much as he did find his way back to the grill. After losing his decade-long Bridgeland lease, he spent four years behind the wheel of Marietta’s Gelato Bar, a 1977 vintage food truck that kept his culinary instincts sharp as he slowly plotted his return. Now Burger 320 is back and it has brought Marietta’s Gelato along for the ride. The new location in the Greenview Industrial area pairs both concepts under one roof, with the gelato bar up front and the grill humming behind it. Same menu, same philosophy: fresh brisket ground daily, buns baked and branded in-house, potatoes chipped to order. “Why change perfection,” he says. Prairie staples like Alberta beef, potatoes and grain meet the Italian craft of hand-ground brisket and gelato made fresh daily. Flavours like pistachio, whiskey hazelnut chocolate and champagne strawberry reflect the culture that runs through everything Mario touches. In a city increasingly obsessed with the smash burger, Burger 320 holds its ground, one brisket burger at a time. Keep an eye out, Mario’s already working on his next concept.
