The original CHARCUT chocolate chip cookies started as a restaurant favourite and quickly became a must-bake for anyone chasing the perfect balance of soft and chewy. The recipe is all about precision — creamed butter and sugar for lift, a chill before baking for depth and good chocolate that melts into puddles.

Straightforward but unforgettable, this is the cookie that never disappoints.

CHARCUT Chocolate Chip Cookie

Crisp on the edges, soft in the middle and loaded with chocolate. The iconic CHARCUT cookie, now ready for your kitchen. Makes two dozen cookies.

Ingredients

  • 136 grams brown sugar
  • 136 grams white sugar
  • 181 grams softened butter
  • 4 grams vanilla extract
  • 80 grams whole egg
  • 3 grams baking soda
  • 4 grams salt
  • 296 grams all-purpose flour
  • 200 grams chocolate chips

Instructions

  • Combine softened butter and sugars in mixer with paddle attachment.  On medium high speed cream together until light in colour and fluffy texture.  You might need to turn mixer off and scrap down sides of the bowl with a spatula to ensure everything is incorporated evenly.
  • Turn off mixer and add the dry and wet ingredients (don’t add the chocolate chips yet). Start on low speed until ingredients have come together, then switch to medium speed and mix for 3-4 minutes.
  • While mixer is on medium speed add the chocolate chips, continue mixing for 1-2 minutes.
  • Turn off mixer, form 40 gram cookie balls and arrange on baking sheet that is lined with parchment paper.  For best results place cookie dough balls into the fridge for 30-45 minutes.
  • Preheat oven to 350 degrees F.  Once preheated bake cookies for 8-12 minutes or until golden brown and cooked in the middle. The time for baking will differ depending on oven.  For convection oven check at 8 minutes, for conventional oven you will most likely need an extra 2-4 minutes.
