Terroir Symposium Signature Dinner

“Song Bird,” an extraordinary plant-based dining experience hosted by Primary Colours and celebrated Chef Matthias Fong. This thoughtfully curated event will showcase the beauty of culinary artistry, community, and the vibrant renewal of spring.

Inspired by the heartfelt lyrics of Fleetwood Mac’s “Song Bird,” this six-course dinner pays tribute to strength, love, and resilience—qualities that reflect the hospitality industry’s passion, the connection between communities, and the beauty of the garden’s bounty. Chef Fong, known for his mastery of seasonal Canadian ingredients, invites guests to join him along with his invited chefs for an evening of beautiful intention and unforgettable flavors; Chef Danny Beaulieu from Änkôr (Canmore), Koji Kobayashi from Sukiyaki House, Chef Liana Robberecht from Brews & Bloom (Calgary/Edmonton), Chef Francis Martinez from Fine Print, and special guest chef from New York, Chef Abi Balingit. Also joining us will be Judith Kwong from Sukiyaki house to curate a stellar lineup of beverages to complement the evening.

The evening begins with a signature welcome drink and canapés, setting the evening for a celebration of art-driven culinary collaborations. Each course will be plated on stunning Steelite Canada plateware, where form meets function to complement the artistic narrative of each dish. To elevate the storytelling experience, thoughtful pairings will enhance every bite.

“Song Bird” is more than a dinner—it is a journey into the transformative power of hospitality. With every dish and every sip, this event invites guests to connect, celebrate, and savor the renewal and harmony of spring in an unforgettable setting.
