Local Specialty Pastry Maker Celebrates 5 Years in Cochrane

Award-winning one of a kind pastry maker Pascal Bagioli and his partner Lison McCullough of Pascal’s Patisserie, are celebrating 5 delicious years in Cochrane this September. A genuine artisan of a heritage trade devoted to the simple elegance of the classic croissant, Chef Bagioli is a long way from home in the south of France. Like many newcomers, however, he now considers Cochrane home and feels fortunate to be able to live and earn his living there.

Pascal sums up their experience in the heart of historic downtown Cochrane where they own and operate their pastry atelier/boutique. “I come from the south of France, Toulouse. I would not be able to do my frozen pastry there. Here there is more opportunity to be creative. It is not always easy, and it takes a lot from us but I want to thank the people who give me and Lison a chance here to be ourselves, to bring something special to their table, to their hearts. Merci.”

They are also celebrating 10 years since being nationally recognized by the Globe and Mail’s Small Business Challenge Regional Winners for Alberta in 2015. More than 3,300 small businesses across the country entered the Canada-wide Small Business Challenge that year.
