Brassica Mustard

Alberta grows some of the world’s best mustard seed, yet much of it leaves the country before returning to store shelves.

One local producer is working to change that, one jar at a time.

At almost 30 years in business, Brassica Mustard was started after a local chef realized that most Canadian mustard seed is shipped overseas, where it’s made into fancy French mustards — and then shipped back to Canada.

In 2019, the business was sold to a friend and fellow chef, Eric Giesbrecht. The owner of Meta4 Foods, Eric loves to experiment with local fruits and flavours such as haskap and horseradish.

Try the regular whole-grain mustard or one of the flavoured blends. Puttanesca won an award at an international mustard competition two years ago. Honey-dijon and dill are also popular, as well as the cranberry. All the seeds and honey are sourced in Alberta and the white wine vinegar is 100 per cent Canadian.

“I love the alchemy of mustard,” Giesbrecht says. “It’s so incredibly versatile. It just explodes with possibility.”
