Ploughman’s Single Malt launches as new flagship for Canadian whisky

Eau Claire Distillery (Eau Claire) has released Ploughman’s Single Malt Whisky finished in Pedro Ximénez (PX) sherry casks, its most elevated and distinctive whisky to date, and a long-term flagship intended to elevate the conversation around Canadian whisky.

“Ploughman’s represents the culmination of years of learning and refinement,” said David Farran, Founder and President of Eau Claire Distillery. “It’s a whisky that reflects our belief in Alberta as a serious place to make single malt, not by forcing attention, but by letting the process speak for itself.”

Ploughman’s is made with 100 per cent Alberta malted barley, including horse-farmed grain grown as part of Eau Claire’s farm-to-glass philosophy. Initial maturation takes place in a combination of ex-bourbon and European oak casks. From there, select barrels are hand-chosen by Master Distiller Daniel Gowrie and finished in PX casks from Ximénez-Spínola, one of Jerez’s historic family-run bodegas, known for its long-standing focus on PX grapes and traditional solera practices.

The result is a richly layered whisky that balances structure and depth with regional character. Tasting notes include aromas of toasted oak, espresso, dark chocolate and dates, followed by a palate shaped by European oak spice, roasted walnuts, honey and cherry. The PX finish contributes notes of raisins, dark cocoa and dried fruit, carrying through to a long, contemplative finish with subtle cigar-box character.

In October 2025, Ploughman’s Single Malt earned Double Gold at the prestigious San Francisco World Spirits Competition, one of the industry’s most respected spirits competitions, reinforcing its position among Canada’s most serious whisky releases.

Ploughman’s Single Malt Whisky, released in limited quantities, is available online through Eau Claire Distillery and at the distillery in Turner Valley while supplies last.
