Modern Steak is bringing in the big guns for their new spring/summer menu launches June 9. They have partnered with acclaimed and award-winning French chef Xavier Lacaze as the consulting mind behind this menu that elevates Alberta beef, showcases pristine seafood, and celebrates the vibrancy of summer. To bring this menu to life, they are also excited to announce Chef Dylan Sexton (Executive Chef, Stephen Avenue), Chef Jeromie Strom (Executive Chef, Southport) and Chef Matthew Langford (Executive Sous Chef, Stephen Avenue). This talented and dynamic team will continue to uphold Modern Steak’s reputation of bringing its guests the very finest dining experience.
Chef Xavier Lacaze was born and classically trained in the south of France, honing his craft in some of the world’s most celebrated Michelin-starred kitchens. His culinary philosophy blends rigorous French technique with a passion for bold, ingredient-driven cuisine.
Chef Dylan Sexton is a culinary powerhouse in Calgary’s restaurant scene. He blends bold creativity, refined technique, and a deep reverence for Alberta’s world-class ingredients in his role at Modern Steak.
Chef Jeromie Strom brings over two decades of culinary leadership, innovation and operational excellence to Modern Steak. He also helped lead the openings of three major flagship restaurants in Boston, Houston and Dallas, bringing Canadian culinary standards to the U.S. market.
Chef Matthew Langford returns to Modern Steak Stephen Avenue as Executive Sous Chef, bringing his passion and precision to Calgary’s premier steakhouse.
