Blackberry and Thyme Sparkler

A sparkling blackberry mocktail with fresh thyme, lemon and a balance of sweet, tart and savoury flavours is a delightful sip on warm summer days.

Ingredients

  • 1/4 cup fresh blackberries (plus two extra for garnish)
  • 2 tbsp honey
  • 2 tbsp fresh lemon juice
  • 4 oz sparkling water or lemon/lime soda
  • 2 sprigs fresh thyme

Instructions

  • In your glass, muddle the blackberries, honey, and lemon juice until the berries are completely broken down.
  • Fill the glass with plenty of ice.
  • Take one sprig of thyme and rub it gently between your palms to wake up the scent, then tuck it into the side of the glass.
  • Slowly top with sparkling water or soda. The purple juice will swirl beautifully into the clear bubbles.
  • Add a single blackberry and 1 or 2 thyme sprigs for a beautiful aesthetic.
