TERROIR Symposium

After two decades shaping conversations around food and hospitality in Canada, TERROIR Symposium returns May 27 to June 1 with events spanning Calgary and Edmonton.

This year’s 20th anniversary program brings chefs, producers and culinary thinkers together for collaborative dinners, workshops and symposiums built around the theme Joy of Food.

Twenty Years of TERROIR

TERROIR Symposium is back. After two decades shaping the conversation around food and hospitality in Canada, the celebrated culinary symposium returns for its 20th anniversary May 27 to June 1, 2026, spanning Calgary and Edmonton.

This year’s theme, Joy of Food, reflects on the craft, nostalgia and community that have defined the industry — and imagines where it goes from here. The week brings together an exceptional roster of chefs, farmers, producers and culinary thinkers, including Alex Chen, Ned Bell, Chet Sharma, Jason Bangerter, JP McMahon and Daniele Uditi, for collaborative restaurant dinners, hands-on workshops, a VIP Kitchen Party at the Wilder Institute/Calgary Zoo and the annual Symposium at the Calgary Central Library.

Tickets are available for the VIP Opening Reception and Sunday Symposium with a few tickets still available at the following Signature Dining Events.

RIVER CAFÉ
Set against River Café’s iconic riverside setting, A Distinct Taste of Place brings together three defining voices in Canadian cuisine and agriculture. Drawing from regenerative farming, close chef–farmer collaboration and Canada’s diverse landscapes, this 5-course dinner with welcoming cocktail and canapés, celebrates food grown with intention and cooked with respect.

ROUGE
Glasgow chef Peter McKenna joins the Rouge culinary team for a collaborative 6-course dinner inspired by foraging, discovery, and the flavours of the season. A true culinary jam session, with each dish created together and shaped by a meeting of ideas. Includes Scotch cocktail reception and wine pairings.

HIGHWOOD KITCHEN & BAR
The Highwood Kitchen + Bar presents a special event that blends the classroom and the dining room. Setting the Table is an invitation to step inside a living classroom and celebrate the next generation of industry leaders in action. In collaboration with celebrated Pastry Chef and Author Bettina Schormann, culinary students from the SAIT School of Hospitality and Tourism will prepare a four-course pre-set lunch showcasing fresh, local, and seasonal dishes served with a side of student success.

THE QUARTET TABLE
THE QUARTET TABLE is an unforgettable one-night collaboration dinner celebrating Canada’s terroir through four distinct chef backgrounds. Each course reflects a personal signature shaped by the kitchens that formed us built around the best of our land and waters: coast, prairie, forest, and field. Including exceptional pairings by Henry of Pelham Wines, showcased by special guest, Proprietor Daniel Speck.

PIZZA CONVIVIUM
Join celebrated pizzaiolo Daniele Uditi of Pizzana alongside the team at Letty for a one-night-only dining experience inspired by the spirit of convivium — the timeless tradition of gathering around the table to eat, drink and connect.

The evening will begin with welcome snacks and flowing Prosecco before unfolding into a beautifully curated five-course dinner brought together with Italian inspiration and a deep respect for craftsmanship, simplicity and flavor.
