With a manageable outlay of cash, no prep to speak of and almost instant gratification, this drink will evoke the tropics and push back the winter gloom.

Dragon Fruit Martini

Chopped dragon fruit is blended with sugar, vodka or gin, fresh lime juice and coconut milk resulting in a refreshing tropical cocktail that is both tasty and easy on the eyes.

Ingredients

  • 1 ripe dragon fruit, peeled and chopped
  • 1/2 cup vodka or gin, your favourite brand
  • 1 tbsp freshly squeezed lime juice
  • 2 tbsp sugar or simple syrup
  • 3-4 ice cubes
  • 1/2 cup coconut milk, optional
  • 1 splash Grenadine, optional for colour

Instructions

  • Place fruit in blender with the other ingredients and blend for about 30 seconds, just until smooth. Taste and adjust the flavour to your liking (lime juice, sugar, gin, coconut milk).
  • Pour into chilled glasses and garnish with a slice of lime and/or a slice of unpeeled (to show the pink) dragon fruit. It’s as fun to make as it is to drink.
