
This creamy pastel green salsa isn’t meant to be especially hot; it’s meant to provide a cooling counterpoint to other spicier condiments. Like all salsas, it can be spooned over a grilled protein (salmon is particularly good) as easily as scooped up with a tortilla chip.
I sometimes add a little mayonnaise to the last bit and use as a sandwich spread.
Salsa Aguacate
Salsa Aguacate is a light, creamy, green avocado salsa delicious with tacos, nachos, on chicken, fish and more!
Ingredients
- 2 medium-large ripe avocados, peeled
- 2-3 small-medium tomatillos, rinsed and chopped
- 1/4 cup lime juice
- 1/2 cup cilantro
- 2 scallions, chopped
- 1-2 cloves garlic
- 1 serrano chile, seeded and deveined (optional)
- 1 jalapeno chile, seeded and deveined (optional)
- 2 tsp kosher salt
Instructions
- Add all ingredients to a blender and whiz until smooth.
- Adjust seasonings by adding more or less of ingredients to taste.
