
Soffritto founder Gord Fontaine has built a 15-year business around sourcing exceptional olive oils from producers across the globe.
His newest shop in Willow Park Village extends that mission, stocking oils so fresh they’re pressed and delivered within two months.

In 2025, Soffritto marked 15 years of offering Calgarians artisanal pasta, sauces, olives and a slew of extra-virgin olive oils, flavoured olive oils and vinegars. Founder Gord Fontaine and his team also opened a store in Willow Park Village in December. The new location offers the same culinary experiences, including ultra-premium olive oil that Fontaine seeks out from top producers in the northern and southern hemispheres, from Greece to Chile.
At press time, he was eagerly awaiting the delivery of fresh Galega and Lentisca olive oils from Portugal. “When they land in the store, it will be just 60 days since they were pressed,” he says. “It’s like moving heaven and earth to get them here that quickly.”
Watch for pop-up ice cream-making this year, too, featuring flavoured balsamic vinegars. And if you can’t wait, pick up a bottle of the blueberry balsamic and pour some over vanilla ice cream.
