
There’s a new reason to ride the Banff Gondola.
Sky Bistro has introduced a refreshed menu under Executive Chef Matthew Smith, with seasonal dishes that let Alberta ingredients take centre stage.

Both the menu and the dining room at the Pursuit Group’s Sky Bistro in Banff received a recent makeover as new Executive Chef Matthew Smith takes the reins. With all seating now oriented to highlight the spectacular views atop Sulphur Mountain, the gorgeous dining room is the perfect setting for the seasonal, locally-oriented menu that Smith says reveres a deep sense of place. The Bison Carpaccio, featuring pickled mushrooms, haskap aioli, radish, Sylvan Star Grizzly Gouda and a bannock crumble, was spectacular as was Sky’s 14-oz. Lamb Barnsley Chop which was served with grilled broccolini, seasonal vegetables and a mushroom ragout that was earthy and divine. We’ll be back for the Roe and Chips with salmon roe, mascarpone crème fraîche, dill, chive oil and house chips.
