The Bav + The Tav

There must be something in the water in Bragg Creek as it’s probably the most delicious hamlet per capita in Canada. And one iconic restaurateur is a fierce advocate for the local scene. Bav + Tav (formerly the Bavarian Inn) owner Charlie Holschuh had us out for dinner not long ago and his infectious enthusiasm paired wonderfully with the fabulous Bavarian cuisine he’s become known for since opening in 1991.

We had to try the seasonal chantrelle menu and fell in love with Chef Johnny Newinger’s mushroom soup. While you’ll never go wrong with schnitzel here, we opted for the bison rouladen for a walk on the wild side. This savoury and hearty meal (you can choose one or two pieces) would be perfect after a day of winter hiking or cross-country skiing. Pair it with one of the Tav’s great hefeweizen beers and finish with an Apfel Strudel and you’ve got yourself a perfect day in the foothills. Guten Appetit!
