Pursuit Group continues its culinary conquest of the Rockies this summer with the opening of Aalto at Pyramid Lake Resort just outside of Jasper.

Claiming the top floor of the picturesque lodge, Aalto features a completely renovated space that will significantly elevate the dining experience of the former “camp-style” lodge while creating a gorgeous event space for small weddings and other gatherings. Meaning “wave” in Finnish, Aalto’s menu marries the flavours of the northern wilds with the refined creativity of Shane Rutledge, chef de cuisine at Aalto and Terra in Jasper and Thomas Riding, Pursuit’s executive chef Jasper and Maligne Valley.
Using Nordic techniques like smoking and fermenting, Aalto aims to source as locally as possible with produce coming from a nearby farm, fish from the West Coast, and local game. Enjoying an unobstructed view of Pyramid Lake as the sun began to sink in the sky was one of our favourite dining experiences so far in 2023. From the hearty and beautiful rye and hay butter start to the dark chocolate kladdkaka dessert, the meal was exceptional.
