Buttery and nutty, pecan sandies are a popular and delicious holiday cookie. The rich shortbread is studded with chopped pecans that will melt in your mouth. A hint of cinnamon gives these cookies a subtle warmth making them an excellent cookie to enjoy with coffee or tea.

The dough is rolled into balls, flattened and topped with a whole pecan before going into a preheated oven. These cookies make a delightful addition to any holiday platter and are perfect for gift giving.

Pecan Sandies

Ingredients

  • 1 cup butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp vanilla
  • 2 cups flour
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1 1/2 cups pecans, chopped plus 24 whole pecans for topping (optional)

Instructions

  • Cream the butter and sugars until well combined.
  • Add the vanilla and mix until incorporated.
  • Add the flour, salt and cinnamon and once the dough starts coming together and pulling away from the bowl, add in the pecans.
  • Divide the dough into 24 balls and place on a parchment-lined sheet, spaced apart.
  • Press down each ball with the bottom of a glass.
  • If you are topping with a pecan, press the nut down on each cookie.
  • Bake at 350 degrees for 15 minutes. Let cool for a few minutes and enjoy.
