Pastiche has opened in Bridgeland, bringing Jason Exton and Kyle Opel’s latest restaurant concept to the neighbourhood.

The menu pairs polished plates with an easygoing atmosphere and a wine list worth exploring.

Riding high on the success of their Love, Damian pop-up at Meat and Bread last year, restaurateur partners Jason Exton and Kyle Opel have opened Pastiche in the historic DeWaal Block in Bridgeland. Taking over the spot formerly home to Jinbar, the high ceilings, exposed brick walls and huge windows make the space ideal for a lingering meal with friends.

While the menu at Pastiche is rooted in classic fine-dining techniques and local craftsmanship, the experience is designed to be entirely approachable. The goal, they say, is to strip away the formality of traditional French dining, ensuring exceptional food and carefully selected wines are accessible to everyone. We loved the sneak peeks at the seared scallop and the steak with cheesy mashed potatoes and a ton of other delicious bites with some spectacular wines.
