Calgary’s Respect the Technique has built a loyal following for its ramen, but one pantry staple deserves a spot in your kitchen, too.
This savoury gluten-free and nut-free chili oil has become a go-to condiment for home cooks who like a pop of flavour.
Johnny’s World Famous Rayu
Jonny’s World Famous Rayu is a vegan-friendly, gluten-free and nut-free garlic chili crisp that you’ll want to add to everything: rice, pizza, scrambled eggs, avocado, chicken, you name it.
It’s rare to find a chili crisp that’s peanut-free, so it’s a bonus to find out it’s also local; it’s made in Calgary by Kaede Hirooka and Jonathan Chung, co-owners of Respect the Technique. They also sell all kinds of other delicious foods, including homemade ramen, pork belly chashu (pork belly that has been cured and braised in their secret umami-rich soy sauce), as well as shrimp and pork wontons. Just don’t forget the Rayu. If it isn’t quite world-famous yet, it should be.
